Fried Rice Recipe: Easy, Quick, Delicious!
10 Simple Steps to Fried Rice
Okay, maybe it’s just me, but I always found that my fried rice cooking experiences always ended badly until I finally learned how to do it the right way! Before then, I would get soggy rice, undercooked vegetables, and maybe even dreadfully tasting fried rice. I was very displeased. But, I heard of something that I figured I’d try, and I’m glad I did! Choose your own protein to add to the fried rice recipe – tofu is a personal favorite.
This recipe can be cooked while you’re traveling on the road – dirtbaggers and travelers alike, this one’s for you!
Time Cooking Fried Rice
Prep time: ~15 minutes
Cooking time: ~20 minutes
Yields: ~5-7 servings
3 cups cooked white rice
1 cup peas (I buy frozen)
1 cup carrots (I buy frozen)
1/2 cup finely chopped scallions
3 tbsp. soy sauce
3 tbsp. pepper
1 tsp. salt
3 garlic cloves, minced
6 tbsp. vegetable oil
chopsticks (or spatula)
bowl (for serving and eating your rice with)
Step 1: Cook 3 cups of rice in your rice cooker. Or cook rice in your pot on the stove top. Set rice aside in the fridge and let cool for 30 at least minutes. The trick is to add a tad less water to cook your rice with so that it’s not too moist.
Step 2: Unthaw the peas and carrots. Finely chop scallions and garlic cloves and put aside.
Step 3: Scramble the eight eggs, season with pepper and salt to your taste (1 tsp. salt and 1 1/2 tsp. pepper for me). Next, heat 2 tbsp. oil in a medium-sized saucepan. When the oil is hot, mix in the egg mixture. Scramble until eggs are cooked. Remove from heat.
Step 4: Cut up scrambled eggs on a cutting board. Cut these egg bits into bite-sized pieces to add to you stir fry later. Set the eggs to the side along with your finely chopped scallions.
Cooking the Fried Rice
Step 1: Grab a wok.
Step 2: Place 4 tbsp. vegetable oil into the wok. Turn burner on medium heat. Allow oil to get hot.
Step 3: Once the oil has been heated (~1 minute), add your peas, carrots, pepper, salt, soy sauce, garlic, and rice to the wok. Stir often. Keep stirring in wok on medium heat for 5 minutes until all ingredients are mixed well. Turn heat to low-medium.
Step 4: Add your eggs and scallions. If you’d like, you may add an additional teaspoon of soy sauce and pepper, but it is not necessary. Just season to taste.
Step 5: Stir all ingredients in wok to mix well. Leave on low heat and stir for 5 more minutes.
Step 6: Turn off heat. Taste your creation.
You may want some more protein in your fried rice. Prepare your protein accordingly. Add your protein to your fried rice when you toss in the rice, peas, carrots, and seasoning.
Vegetarian: fry tofu in a separate wok. Slice tofu in small bits.
Non-vegetarian: sauté shrimp in a pan. Season shrimp with minced garlic, pepper, salt, a teaspoon of fish sauce, and a teaspoon of vegeta seasoning.
